  • 2 Tbsp apple cider vinegar
  • 1 Tbsp lemon juice
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cucumber
  • 1 pint grape tomatoes
  • 1/2 red onion
  • 1/4 bunch fresh parsley (chopped)
  • 1 can (15 oz) cannellini beans (rinsed and drained)
  • 1 can (12 oz) chunk light tuna (drained)
  • 2 oz feta cheese (crumbled)

Instructions

  1. In a bowl or jar, whisk together olive oil, apple cider vinegar, lemon juice, oregano, salt, and black pepper to create the vinaigrette.
  2. Finely dice the red onion and soak it in ice water for five minutes to mellow its flavor. Cut the cucumber into quarter rounds and slice the grape tomatoes in half.
  3. In a large mixing bowl, combine diced cucumbers, halved tomatoes, drained onions, chopped parsley, rinsed cannellini beans, drained tuna, and crumbled feta cheese.
  4. Pour the vinaigrette over the mixture and gently fold to combine without mashing the tuna.
  5. Allow the salad to chill for at least 30 minutes before serving to let flavors meld.
