1/2 lb Mafaldine pasta
3 Tbsp salty butter
1.5 cups finely chopped broccoli
4 cloves garlic (finely diced)
1 cup heavy cream
Zest of 1 lemon
Juice of 1/2 lemon
1/2 cup grated Parmesan cheese
Kosher salt and fresh cracked pepper to taste
Instructions
In a large pot, bring salted water to a boil. Add Mafaldine pasta and cook until al dente (8–10 minutes). Reserve 1/2 cup of pasta water before draining.
In a heavy-bottomed saucepan over medium heat, melt butter. Add broccoli and sauté for one minute, then add garlic and cook until fragrant.
Pour in heavy cream, add lemon zest and Parmesan cheese. Stir to combine and let simmer gently.
Add drained pasta and lemon juice to the sauce. Toss until evenly coated, adding reserved pasta water as needed to achieve desired consistency.
Taste and adjust seasoning with salt and pepper before plating.
