1 cup plain Greek yogurt
1 cup grated cucumber
1 tbsp extra virgin olive oil
2 cloves garlic (minced)
15 oz can chickpeas (drained and rinsed)
2 packages pita bread (cut into triangles)
1 cup roma tomatoes (quartered)
1 block feta cheese (crumbled)
Instructions
Preheat oven to 400℉ (200℃).
Prepare roasted chickpeas by draining, rinsing, and patting dry. Toss with olive oil, salt, pepper, and cayenne; spread on a baking sheet.
Roast chickpeas for 25-30 minutes until golden brown.
