  • ½ cup ricotta cheese
  • ¼ cup grated Parmesan cheese
  • ¼ cup breadcrumbs
  • 1 egg
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp lemon zest
  • 1 tsp garlic powder
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 2 cups fresh spinach
  • 2 cloves garlic, minced
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine ground chicken, ricotta cheese, Parmesan, breadcrumbs, egg, parsley, lemon zest, garlic powder, salt, and pepper. Mix until well combined.
  3. Shape the mixture into meatballs (about 1.5 inches wide) and place them on the prepared baking sheet.
  4. Bake for 20–25 minutes until golden brown.
  5. While baking, bring chicken broth to a boil in a medium saucepan. Add orzo and cook for about 8–10 minutes until al dente; drain but reserve some broth.
  6. In a large skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant (1–2 minutes), then add spinach and cook until wilted (2–3 minutes). Season with salt and pepper.
  7. Combine orzo with spinach mixture in the skillet. If needed, add reserved broth for moisture.
  8. Serve meatballs over the garlicky orzo spinach mix; garnish with lemon wedges.
