  • 4 1/4 cups all-purpose flour
  • 4 1/2 tsp instant dry yeast
  • 1 cup buttermilk (room temperature)
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter (room temperature)
  • 2 large eggs (room temperature)
  • 2 Tbsp fresh lemon zest
  • 1/4 cup fresh lemon juice
  • 1 tsp fine salt
  • 1/2 cup packed light brown sugar
  • 2 cups powdered sugar
  • 2 Tbsp unsalted butter (melted)
  • 1 Tbsp + 1 tsp poppy seeds (optional)
  • Fresh Lemon Zest (for garnish)

Instructions

  1. In a stand mixer bowl, combine flour, yeast, and salt. Mix well.
  2. In another bowl, whisk together buttermilk, sugar, melted butter, eggs, and lemon zest until smooth.
  3. Gradually add the wet mixture to the dry ingredients and mix until combined.
  4. Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.
  5. Place dough in a greased bowl, cover, and let rise for about 30–40 minutes or until doubled in size.
  6. Punch down the dough and roll it out to a rectangle. Spread butter over it and sprinkle with granulated sugar and lemon zest.
  7. Roll tightly into a log and cut into individual rolls using dental floss.
  8. Place rolls in a parchment-lined baking dish, cover again, and let rise for another 20–30 minutes.
  9. Preheat oven to 350°F (175°C) and bake rolls for 25–28 minutes or until golden brown.
  10. Prepare icing by mixing powdered sugar with lemon juice and melted butter; drizzle over warm rolls.
