Scale
  • 1 cup granulated sugar
  • 2 tablespoons lemon zest
  • 1/2 cup melted unsalted butter
  • 3 tablespoons vegetable oil
  • 2 large eggs
  • 2/3 cup whole milk
  • 1/2 cup full-fat Greek yogurt
  • 2 tablespoons fresh lemon juice
  • 2 1/4 cups all-purpose flour
  • 2 3/4 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons poppy seeds

Instructions

  1. Preheat your oven to 425°F (220°C) and prepare a muffin pan with paper liners.
  2. In a mixing bowl, combine sugar and lemon zest, rubbing them together to release essential oils.
  3. Add melted butter, vegetable oil, eggs, milk, Greek yogurt, lemon juice, and vanilla extract to the sugar mixture. Whisk until smooth.
  4. In another bowl, whisk together flour, baking powder, baking soda, salt, and poppy seeds.
  5. Gently fold the dry ingredients into the wet ingredients until just combined; avoid overmixing.
  6. Let the batter rest for one hour at room temperature.
  7. Fill muffin liners nearly to the top and bake for 6–7 minutes at high temperature before reducing to 350°F (175°C) for an additional 7–8 minutes.
  8. Check for doneness using a toothpick; cool in the pan for five minutes before transferring to a wire rack.
