  • 1 cup uncooked orzo
  • 2 mini cucumbers, chopped
  • 1 cup cherry tomatoes, quartered
  • 2 tablespoons red onion, chopped
  • 2 cups cooked chicken (rotisserie or roasted)
  • 2 cups arugula (optional)
  • 1/2 cup freshly grated Parmesan cheese
  • 1.5 tablespoons lemon juice + zest of 1 lemon
  • 2.5 tablespoons olive oil
  • 1 teaspoon honey
  • 1 clove garlic, minced
  • Salt & pepper to taste

Instructions

  1. Bring a large pot of salted water to boil. Cook the orzo according to package instructions until al dente (about 8–10 minutes). Drain and rinse under cool water.
  2. While the orzo cooks, chop the mini cucumbers and quarter the cherry tomatoes. Soak the red onion in cold water for about 10 minutes to mellow its flavor.
  3. In a small bowl or jar, combine lemon juice, lemon zest, olive oil, honey, minced garlic, salt, and pepper; mix well.
  4. In a large mixing bowl, combine cooled orzo with chopped vegetables and chicken. Drizzle in the dressing and toss gently until everything is well coated.
  5. If using arugula, add it just before serving to keep it fresh.
