Ingredients

Scale
  • 1 pound potato gnocchi
  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • Zest of 1 lemon
  • 1/4 cup freshly squeezed lemon juice
  • 1/2 teaspoon red pepper flakes
  • 1 cup baby spinach
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Boil water in a large pot and season generously with salt. Cook the gnocchi according to package instructions until they float; drain and set aside.

  3. In the same skillet, sauté minced garlic until fragrant (about 30 seconds). Pour in heavy cream, stirring to combine. Add lemon zest and juice; simmer for 2–3 minutes.
  4. Stir in red pepper flakes and spinach until wilted. Fold in cooked gnocchi and sliced chicken until well-coated.
  5. Add Parmesan cheese; stir until melted and creamy. Adjust seasoning as needed.
  6. Serve immediately, garnished with fresh basil.
