  • 1 tablespoon butter
  • 2 cloves garlic (minced)
  • 1/2 cup chicken broth
  • 1 tablespoon lemon juice
  • 1 cup heavy cream
  • 1 pound uncooked potato gnocchi
  • 1/2 cup freshly grated parmesan cheese
  • 2 cups fresh baby spinach
  • Salt and pepper to taste

Instructions

  1. Slice each chicken breast in half lengthwise; season with garlic powder and lemon pepper.
  2. In a skillet over medium-high heat, melt olive oil and butter. Sear chicken for about 5–6 minutes per side until golden brown. Remove and keep warm.
  3. In the same skillet, reduce heat and sauté minced garlic for 30 seconds. Add chicken broth and lemon juice; simmer briefly.
  4. Stir in heavy cream and uncooked gnocchi; ensure gnocchi is submerged. Cook uncovered for about 5–7 minutes until tender.
  5. Remove from heat; stir in fresh spinach until wilted. Return sliced chicken to pan; mix gently.
  6. Sprinkle with parmesan cheese before serving.
