  • 1/4 cup light brown sugar
  • 1 tablespoon lemon zest
  • 1 large egg
  • 1 tablespoon fresh lemon juice
  • 2 3/4 cups all-purpose flour (sifted)
  • 3/4 cup wild frozen blueberries
  • Additional sugar and lemon zest for rolling

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, cream together the softened butter, white granulated sugar, and light brown sugar until fluffy.
  3. Add the egg, lemon zest, lemon juice, and vanilla extract; mix until combined.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually incorporate this dry mixture into the wet ingredients until just blended.
  5. Gently fold in the wild blueberries.
  6. Chill the dough for at least 30 minutes in the refrigerator.
  7. Using a cookie scoop or spoon, drop mounds of dough onto prepared baking sheets, leaving space between each cookie.
  8. Bake for 15-17 minutes until golden around the edges but soft in the center.
  9. Allow cookies to cool slightly before rolling them in a mixture of sugar and lemon zest.
