  • 1 kg lamb or mutton (bone-in pieces)
  • ¾ cup full-fat yogurt
  • 4 tablespoons mustard oil
  • 3 red onions (thinly sliced)
  • 4 cloves garlic (peeled)
  • 1 inch ginger (grated)
  • 1.5 teaspoon salt
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 2 teaspoons garam masala
  • 2 teaspoons Kashmiri red chili powder
  • 1.5 teaspoons fennel powder
  • 1 teaspoon coriander powder
  • 3 tablespoons tomato paste
  • ½ cup water

Instructions

  1. Rinse and pat dry the lamb or mutton pieces.
  2. In a bowl, marinate meat with yogurt, salt, turmeric, ginger, and garlic. Let it sit for at least 30 minutes.
  3. Heat mustard oil in a heavy pot until smoking. Sauté sliced onions until golden brown.
  4. Add marinated meat and cook for about 5 minutes until browned.
  5. Stir in spices and tomato paste; cook for another 2-3 minutes.
  6. Add water; cover and simmer on low heat for about 45 minutes to an hour until meat is tender.
  7. Adjust seasoning if necessary before serving.
