  • ½ cup fresh lemon juice (about 2 lemons)
  • 2 tablespoons unsalted butter (for finishing)
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the crust: In a bowl, mix flour, sugar, and salt. Cut in cold butter until crumbly. Add egg yolk and cold water until dough forms. Chill for 20 minutes.
  2. Pre-bake the crust at 350°F for about 12–15 minutes until golden.
  3. Make the custard: Whisk together granulated sugar, cornstarch, and lemon zest in a saucepan. Gradually add milk while whisking; heat over medium until thickened.
  4. Remove from heat; stir in lemon juice, butter, and vanilla extract.
  5. Pour custard into cooled crust; bake at 350°F for an additional 25–30 minutes until edges are set.
  6. Cool completely before slicing; refrigerate for at least two hours before serving.
