1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon ground cinnamon
0.5 teaspoon ground nutmeg
0.5 teaspoon baking powder
1 large egg
0.5 cup unsalted butter, softened
1 cup freshly grated carrots
4 ounces cream cheese, softened
1 large egg yolk
0.5 cup granulated sugar
Instructions
Preheat your oven to 350°F (175°C) and line an 8-inch square baking pan with parchment paper.
In a mixing bowl, cream together light brown sugar and unsalted butter until light and fluffy.
Add in the egg and vanilla extract, mixing until well combined.
In another bowl, whisk together flour, cinnamon, nutmeg, baking powder, and salt; then fold this into the wet mixture along with grated carrots.
In a separate bowl, blend cream cheese with granulated sugar and egg yolk until smooth.
Pour half of the carrot cake batter into the prepared pan, followed by dollops of the cream cheese mixture; top with remaining batter and swirl gently.
Bake for approximately 30 minutes or until golden brown; allow to cool before slicing.
