  • ¼ large red onion, sliced
  • ¼ cup sliced green or black olives (optional)
  • ¼ cup sliced banana peppers (or jalapeños)
  • 1 tablespoon fresh basil (optional)
  • ½ tablespoon apple cider vinegar (or balsamic vinegar)
  • 1½ tablespoons extra-virgin olive oil
  • 1 teaspoon Italian seasoning blend
  • Salt and pepper (to taste)
  • 12 tablespoons mayonnaise (or Greek yogurt)
  • 1 teaspoon mustard (to taste)

Instructions

  1. Prepare the veggies: Wash the iceberg lettuce and pat dry. Slice the tomato into rounds and the red onion thinly.
  2. Mix the dressing: In a bowl, whisk together mayonnaise, apple cider vinegar, mustard, salt, and pepper.
  3. Assemble the sandwich: Spread the dressing on the bottom slice of bread. Layer shredded lettuce, meats, provolone cheese, tomato slices, onions, olives, banana peppers, and optional basil.
