  • 2 yellow onions
  • 1 tbsp avocado or olive oil
  • Sea salt
  • 1 pound ground beef (85/15 lean)
  • 8 leaves green leaf lettuce or 2 small heads of iceberg
  • 2 tomatoes (sliced)
  • 4 dill pickles (thinly sliced)
  • 2 tsp yellow mustard
  • 1/4 cup avocado oil mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp pickle relish
  • 1/2 tsp white grape juice vinegar

Instructions

  1. Heat a large skillet over medium heat and sauté thinly sliced yellow onions in avocado oil for about 20–30 minutes until caramelized. Stir occasionally and season lightly with sea salt.
  2. While the onions cook, preheat your grill or griddle to medium heat (350°F–400°F).
  3. Form ground beef into four patties, about ¾ inch thick. Season one side with yellow mustard.
  4. Place patties on the grill, mustard side down. Cook for about 6–10 minutes per side, adding cheese in the last few minutes if desired.
  5. To assemble, place each patty on a lettuce leaf and top with caramelized onions, sliced tomatoes, pickles, and your secret sauce made from mayo, ketchup, relish, and white grape juice vinegar.
