Ingredients

Scale
  • 13/4 cups graham cracker crumbs (gluten-free option available)
  • 1/3 cup melted unsalted butter
  • 3 packages (8 ounces each) cream cheese, softened
  • 3/4 cup packed brown sugar
  • 3/4 cup granulated sugar
  • 4 large eggs, lightly beaten
  • 2 cups sour cream (gluten-free option available)
  • 2 teaspoons ground cinnamon
  • 3/4 teaspoon allspice
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar until well mixed. Press this mixture firmly into the bottom of the prepared pan.
  3. In another bowl, beat together softened cream cheese, brown sugar, and granulated sugar until smooth. Gradually add eggs at low speed until just combined.
  4. Fold in sour cream, vanilla extract, cinnamon, allspice, and salt until evenly mixed. Pour filling over crust in the springform pan.
  5. Bake for 55-65 minutes or until edges are set but center has a slight jiggle. Cool on wire rack for about 10 minutes before refrigerating overnight.
  6. For serving, whip heavy cream with powdered sugar and cinnamon until soft peaks form; top cheesecake slices before enjoying.
