  • 3 teaspoons instant yeast
  • 1/2 cup caster sugar
  • 1 1/2 cups warm milk
  • 4 1/4 cups bread flour
  • 2 teaspoons cinnamon powder
  • 2 teaspoons allspice
  • 1/2 teaspoon salt
  • 1 1/2 cups sultanas
  • Zest of 12 oranges
  • 50g unsalted butter (melted)
  • 1 egg (room temperature)

Instructions

  1. In a large mixing bowl, combine bread flour, yeast, sugar, cinnamon, allspice, and salt; mix well.
  2. Gradually add warm milk, melted butter, and egg; stir until a sticky dough forms.
  3. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  4. Place the kneaded dough in a greased bowl; cover and let it rise in a warm spot for 1-1.5 hours or until doubled in size.
  5. Punch down the dough gently, then fold in sultanas and orange zest.
  6. Divide the dough into twelve equal pieces; shape each piece into a ball.
  7. Place shaped buns close together in a greased baking dish; cover and let rise for another 30-45 minutes.
  8. Preheat your oven to 375°F (190°C) while the buns rise.
  9. Bake for about 20-25 minutes until golden brown; cool slightly before glazing with apricot jam mixed with water.
