  • 1 can (14 ounces) pineapple tidbits or rings
  • 1/4 cup pineapple juice
  • 2 tablespoons melted unsalted butter or ghee
  • 2 tablespoons sesame oil
  • 1 tablespoon lemon juice
  • 1 tablespoon light brown sugar
  • 1 1/2 tablespoons honey
  • 12 large garlic cloves, minced
  • Optional: diced onion, fresh mint leaves for garnish
  • Sea salt
  • Smoked paprika
  • White pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a large sheet pan with aluminum foil or parchment paper.
  3. Cut the salmon into two equal portions and place them on the lined pan.
  4. Arrange pineapple tidbits or rings around the salmon.
  5. In a mixing bowl, whisk together melted butter, pineapple juice, sesame oil, lemon juice, brown sugar, honey, minced garlic, salt, smoked paprika, and white pepper until well combined.
  6. Spread the marinade evenly over the salmon pieces.
  7. Bake for 25-30 minutes or until the internal temperature reaches 145°F (63°C).
  8. Let it rest for ten minutes before serving and garnish with fresh mint leaves.
