  • 1/3 cup honey
  • 1/4 cup soy sauce (low sodium preferred)
  • 3 tablespoons ketchup
  • 1 cup uncooked white rice (long grain or jasmine)
  • 2 cups chicken broth
  • 1 tablespoon olive oil or butter
  • 1/2 cup diced bell peppers
  • 1/2 cup frozen peas

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. In a large mixing bowl, combine ground meat, breadcrumbs, egg, onion, minced garlic (2 cloves), soy sauce, sesame oil (optional), pepper, and salt. Mix until just combined.
  3. Form the mixture into small meatballs (about 1 inch in diameter) and brown them in a skillet over medium heat until golden.
  4. In a small saucepan, mix honey, soy sauce (1/4 cup), ketchup, water, and minced garlic (2 cloves). Heat until bubbling; if desired, thicken with cornstarch.
  5. Spread uncooked rice in the baking dish and pour in the broth. Layer with browned meatballs and top with bell peppers and peas.
  6. Pour the honey garlic sauce over everything and cover tightly with aluminum foil.
  7. Bake for 40 minutes covered; then uncover and bake for an additional 10-15 minutes until golden.
