  • 16 ounces carrots, peeled and sliced
  • ½ cup pure clover honey
  • 3 large eggs
  • ½ cup heavy cream
  • 1 teaspoon vanilla extract
  • ¼ cup granulated sugar
  • 2 tablespoons water
  • Pinch kosher salt
  • ½ teaspoon coarse kosher salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine Biscoff crumbs, melted butter, brown sugar, and a pinch of salt in a bowl until mixed. Press into a 9-inch pie plate.
  3. Steam carrots until fork-tender (20–30 minutes). Blend with honey, granulated sugar, water, vanilla extract, and kosher salt until smooth.
