Homemade Jam Donut Focaccia is a delightful twist on traditional focaccia, blending the fluffy texture of bread with the sweetness of raspberry preserves. This recipe is not just about baking; it’s about creating an experience that warms your heart and tantalizes your taste buds.

  • 1 3/4 cups warm water (105-115°F)
  • 2 tsp sugar
  • 1 packet active dry yeast (about 2 1/4 tsp)
  • 2 cups bread flour
  • 2 cups all-purpose flour
  • 2 tsp salt
  • 6 tbsp olive oil, divided
  • 1 jar raspberry preserves (Bonne Maman or similar)
  • 2 cups confectioners' sugar
  • 24 tbsp whole milk (or as needed for consistency)

Instructions

  1. Activate the yeast by combining warm water and sugar in a bowl. Sprinkle yeast on top and let stand for 5–10 minutes until frothy.
  2. In a large bowl, mix bread flour, all-purpose flour, and salt. Add the activated yeast mixture and 6 tbsp olive oil. Stir until a dough forms.
  3. Knead the dough on a floured surface for about 8–10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a damp towel, and let rise in a warm spot for 1 to 1.5 hours until doubled in size.
  5. Once risen, shape the dough into a rectangle on a floured surface. Transfer to a parchment-lined baking sheet, dimpling the surface generously.
  6. Fill each dimple with raspberry preserves and let rest for another 20–30 minutes.
  7. Preheat the oven to 400°F (200°C). Drizzle olive oil over the focaccia before baking for about 18 minutes or until golden brown.
  8. For the glaze, mix confectioners' sugar with enough milk to achieve drizzling consistency. Drizzle over the warm focaccia before serving.
