  • 12 vanilla wafer cookies
  • 16 ounces cream cheese (softened)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 1/4 cup seedless raspberry jam
  • Fresh raspberries for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Place one vanilla wafer in each liner as the base.
  3. In a mixing bowl, beat softened cream cheese and sugar until smooth.
  4. Add eggs one at a time, mixing well after each addition, then stir in vanilla and sour cream.
  5. Fill each liner with batter about 3/4 full.
  6. Top each with raspberry jam, swirling gently with a toothpick.
  7. Bake for 20-25 minutes until edges are set but centers are slightly jiggly.
  8. Cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
  9. Refrigerate for at least 2 hours before serving; garnish with fresh raspberries if desired.
