  • 1.5 lbs boneless, skinless chicken thighs (or breasts), cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 1 large yellow onion, finely diced
  • 2 stalks celery, finely diced
  • 1 large green bell pepper, finely diced
  • 45 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 2 tablespoons Cajun seasoning (for soup)
  • 1 cup heavy cream
  • Fresh parsley and green onions for garnish

Instructions

  1. Season chicken pieces with Cajun seasoning, salt, and black pepper.
  2. Heat olive oil in a Dutch oven over medium-high heat. Sear chicken until golden brown; remove and set aside.
  3. In the same pot, melt butter and whisk in flour to create a roux; cook until light golden.
  4. Add onions, celery, bell peppers, and garlic; sauté until softened.
  5. Stir in Cajun seasoning and smoked paprika; cook for one minute.
  6. Gradually add chicken broth while scraping the bottom of the pot.
  7. Return seared chicken to the pot along with a bay leaf; simmer for 20 minutes.
  8. Stir in heavy cream; adjust seasoning as needed.
  9. Serve hot, garnished with fresh parsley and green onions.
