- 1 tablespoon olive oil
- 4 tablespoons unsalted butter
- 4 tablespoons all-purpose flour
- 1 large yellow onion, finely diced
- 2 stalks celery, finely diced
- 1 large green bell pepper, finely diced
- 4–5 cloves garlic, minced
- 6 cups low-sodium chicken broth
- 2 tablespoons Cajun seasoning (for soup)
- 1 cup heavy cream
- Fresh parsley and green onions for garnish
- Season chicken pieces with Cajun seasoning, salt, and black pepper.
- Heat olive oil in a Dutch oven over medium-high heat. Sear chicken until golden brown; remove and set aside.
- In the same pot, melt butter and whisk in flour to create a roux; cook until light golden.
- Add onions, celery, bell peppers, and garlic; sauté until softened.
- Stir in Cajun seasoning and smoked paprika; cook for one minute.
- Gradually add chicken broth while scraping the bottom of the pot.
- Return seared chicken to the pot along with a bay leaf; simmer for 20 minutes.
- Stir in heavy cream; adjust seasoning as needed.
- Serve hot, garnished with fresh parsley and green onions.
