  • 400 g chicken (cut into small pieces)
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1 teaspoon ground paprika
  • 2 tablespoons olive oil (divided)
  • 1/2 small onion (diced)
  • 1 garlic clove (minced)
  • 1 red bell pepper (diced)
  • 1 green bell pepper (diced)
  • 4 flour tortillas (about 20 cm/8")
  • 1 cup shredded cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large skillet, heat one tablespoon of olive oil over medium heat. Add diced onion and sauté for about 3 minutes until translucent.
  3. Stir in minced garlic and sauté for another 30 seconds before adding diced bell peppers and season with salt and pepper; cook for an additional 4-5 minutes.
  4. Push vegetables aside, add remaining olive oil, then add seasoned chicken. Cook for about 6-7 minutes until browned and cooked through.
  5. Assemble the quesadillas by placing one tortilla on a flat surface, adding a layer of cheese, followed by the chicken mixture, and topping with more cheese before folding.
  6. Place quesadillas on a baking sheet lined with parchment paper. Spray lightly with olive oil spray.
  7. Bake for about 10-12 minutes until golden brown. Let cool slightly before slicing.
