  • 1 lb boneless, skinless chicken thighs
  • 2 tablespoons soy sauce
  • 2 tablespoons teriyaki sauce
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • Salt and pepper to taste
  • 2 cups cooked brown rice
  • 1 cup pineapple chunks
  • 1 red bell pepper, diced
  • 1 cup snap peas or green beans
  • 1 avocado, sliced
  • Sesame seeds and green onions for garnish

Instructions

  1. In a mixing bowl, whisk together soy sauce, teriyaki sauce, honey, olive oil, garlic powder, ginger powder, salt and pepper. Add chicken thighs and marinate for at least 30 minutes in the refrigerator.
  2. Preheat grill or skillet over medium-high heat. Remove chicken from marinade; grill for about 6-8 minutes per side until cooked through (internal temperature of 165°F).
  3. Allow chicken to rest for a few minutes before slicing.
  4. In serving bowls, layer cooked brown rice, sliced chicken, pineapple chunks, diced red bell pepper, snap peas or green beans, and avocado.
  5. Drizzle with additional teriyaki sauce and garnish with sesame seeds and green onions.
