  • 2.5 tbsp olive oil
  • 2.5 tbsp lemon juice
  • 2 garlic cloves (minced)
  • 2 tsp oregano
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1.25 cups cucumbers (diced)
  • 1 cup tomatoes (diced)
  • 1 cup bell peppers (diced)
  • 1/4 cup red onion (finely chopped)
  • 2 tbsp parsley (chopped)
  • 3/4 cup feta cheese (crumbled)
  • 8 pitas
  • 1/2 cup tzatziki sauce

Instructions

  1. In a mixing bowl, combine olive oil, lemon juice, minced garlic, oregano, paprika, salt, and pepper to create the marinade.
  2. Add the chicken chunks to the marinade, ensuring they're fully coated. Marinate for at least 20 minutes.
  3. While chicken marinates, prepare the veggies: dice cucumbers, tomatoes, bell peppers, and red onion; mix with parsley and season with lemon juice, salt, and pepper.
  4. Preheat your grill or grill pan to medium-high heat. Grill marinated chicken for about 5 minutes on each side until cooked through.
  5. Warm pitas in the oven while chicken rests for a few minutes.
