  • lbs sirloin steak, cut into bite-sized cubes
  • lbs baby potatoes, halved or quartered
  • 4 tablespoons olive oil (divided)
  • 4 tablespoons unsalted butter
  • 56 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried Italian herbs
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the baby potatoes, season with salt, pepper, and paprika. Cook until golden brown and fork-tender, about 15 minutes.
  2. Remove the potatoes from the skillet. In the same skillet, add the remaining olive oil and 2 tablespoons of butter. Season the sirloin cubes with salt, pepper, and Italian herbs; sear them for 2–3 minutes on each side until browned but still juicy.
  3. Lower heat to medium-low, add minced garlic and remaining butter to the skillet with steak bites. Sauté until fragrant (about 1 minute).
  4. Return potatoes to the skillet and gently toss everything together for another minute to heat through.
  5. Garnish with fresh parsley before serving hot.
