  • 10 tablespoons unsalted butter (room temperature)
  • ½ cup granulated sugar
  • 2 cups Fruity PEBBLES™ Cereal (divided)
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 1¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 8 large vegan marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large mixing bowl, cream together softened butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, mixing well.
  3. In a separate bowl, whisk together flour, baking soda, and salt. Gradually fold the dry ingredients into the wet mixture until just combined.
  4. Gently fold in 1 cup of Fruity PEBBLES™ cereal.
  5. Scoop out dough balls (about 3 tablespoons each), flatten slightly, place a marshmallow in the center, and wrap the dough around it completely. Roll each ball in remaining cereal.
  6. Space the cookie dough balls about three inches apart on prepared baking sheets.
  7. Bake for 8-11 minutes until golden around the edges but slightly undercooked in the center. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.
