  • Zest of one small lemon
  • 1 tablespoon cornstarch
  • ½ teaspoon ground ginger
  • ½ teaspoon ground cinnamon
  • ½ cup honey (or pure maple syrup or granulated sugar)
  • 1 cup old-fashioned oats
  • ¾ cup white whole wheat flour (or all-purpose flour)
  • ¼ teaspoon salt
  • 6 tablespoons cold unsalted butter, cubed
  • 3 tablespoons pure maple syrup (or brown sugar)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine sliced apricots, lemon zest, cornstarch, ground ginger, ground cinnamon, and honey. Toss until well coated.
  3. In another bowl, mix old-fashioned oats, flour, salt, and cinnamon. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in maple syrup or brown sugar.
  4. Spread the apricot mixture evenly in a baking dish (9×13 inches). Top with the oat mixture.
  5. Bake for about 32 minutes or until golden brown and bubbly around the edges.
  6. Allow to cool for at least 10 minutes before serving.
