  • 2 zucchinis
  • 2 yellow squashes
  • 3 cloves garlic
  • 6 button mushrooms
  • 2 tablespoons fresh rosemary
  • 2 tablespoons dried parsley
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry all vegetables thoroughly. Trim the woody ends off the asparagus and cut them into 1-inch segments. Slice zucchinis and yellow squashes into half-moons or quarters, and slice the mushrooms.
  3. In a large mixing bowl, combine asparagus, zucchini, yellow squash, and mushrooms. Drizzle with olive oil, then add minced garlic, chopped rosemary, and dried parsley. Toss until well coated.
  4. Spread the vegetable mixture evenly on a baking sheet lined with parchment paper.
  5. Roast in the preheated oven for about 20 minutes or until vegetables are tender-crisp and slightly caramelized.
