  • 1 large spaghetti squash
  • 1 block (8 ounces) feta cheese
  • 1 cup cherry tomatoes, halved
  • 4 tablespoons olive oil
  • 2 cloves garlic, minced
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup fresh basil, chopped

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Halve the spaghetti squash lengthwise and scoop out the seeds. Place cut-side up on the baking sheet.
  3. Break feta into chunks and place in the center of each squash half with halved cherry tomatoes scattered around.
  4. Drizzle with olive oil and season with salt and pepper.
  5. Bake for 45-50 minutes until the squash is tender and the cheese is golden.
  6. Once done, scrape the spaghetti strands with a fork and combine with melted feta and tomatoes. Add fresh basil before serving.
