  • 2 tbsp butter
  • 3 tbsp all-purpose flour
  • 2 cups milk (whole or plant-based)
  • 2 tsp honey Dijon mustard
  • 1/4 tsp salt
  • 1/2 tsp pepper
  • 1 and 1/2 cups shredded Old Cheddar cheese

  1. Trim and rinse the Brussels sprouts, removing any loose leaves.
  2. Boil in salted water for 10–12 minutes until tender but still slightly crunchy; drain well.
  3. In a medium saucepan, melt butter over medium heat. Whisk in flour and cook for about 1.5 minutes.
  4. Gradually whisk in milk and cook until thickened (about 5 minutes).
  5. Stir in honey Dijon mustard, salt, pepper, and then mix in shredded cheese until melted.
  6. Fold cooked Brussels sprouts into the cheese sauce until evenly coated.
  7. Transfer to a greased baking dish, top with remaining cheese, and bake at 375°F (190°C) for about 25 minutes until bubbly and golden.
