  • 1/2 cup soy sauce
  • 1/2 cup packed light brown sugar
  • 1 tablespoon sesame oil
  • 2 tablespoons chili garlic sauce or Gochujang Chili Sauce
  • 1/4 cup rice apple vinegar
  • 2 tablespoons minced garlic
  • 2 tablespoons minced ginger
  • 1/4 cup thinly sliced shallots
  • 2 pounds ribeye or top sirloin steaks, cut into 1/8-inch-thick slices
  • 2 tablespoons vegetable oil
  • 3 cups cooked rice
  • 4 fried eggs
  • 1 cup homemade or store-bought kimchi
  • 1 English cucumber, cut into ribbons

Instructions

  1. In a large mixing bowl, whisk together soy sauce, brown sugar, sesame oil, chili garlic sauce (or gochujang), rice vinegar, minced garlic, ginger, and shallots until well combined.
  2. Add the sliced beef to the marinade and toss until evenly coated. Cover and refrigerate for at least one hour.
  3. Heat vegetable oil in a skillet over medium-high heat. Cook half of the marinated beef until golden brown (about 3 minutes on each side). Remove from the skillet and repeat with the remaining beef.
  4. Serve over cooked rice, topped with fried eggs, pickled veggies, kimchi, and cucumber ribbons.
