  • 1/8 tsp allspice
  • 1/4 tsp ginger

  • 4 oz cream cheese
  • 3 tbsp softened butter
  • 3/4 cup powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add in the egg yolk and heavy cream; mix until smooth.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, spices, and salt.
  5. Gradually add dry ingredients to the wet mixture until combined; then fold in shredded carrots.
  6. Scoop dough onto a lined baking sheet about two inches apart; flatten slightly.
