  • 1/2 cup finely chopped tomatoes
  • 1/4 cup chopped red onion
  • 2 tablespoons minced fresh parsley
  • 1 medium jalapeño pepper, seeded and chopped
  • 4 1/2 teaspoons minced fresh cilantro
  • 1 clove garlic, minced
  • 1/4 cup reduced-fat sour cream or Greek yogurt
  • 1 1/2 teaspoons lemon juice
  • 1 1/2 teaspoons lime juice
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon seasoned salt
  • Tortilla chips for serving

Instructions

  1. In a medium bowl, combine cucumbers, tomatoes, red onion, parsley, jalapeño, cilantro, and garlic. Mix well.
  2. In another bowl, whisk together sour cream (or Greek yogurt), lemon juice, lime juice, cumin, and seasoned salt until smooth.
  3. Gently pour the dressing over the vegetable mixture and fold until evenly coated.
  4. Chill in the refrigerator for at least 15 minutes before serving to allow flavors to meld.
