  • 2 cups cherry tomatoes, halved
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 cup ricotta cheese
  • Salt and pepper, to taste
  • Fresh basil leaves, for garnish

  1. Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
  2. In a large skillet over medium heat, add olive oil and sauté cherry tomatoes until softened, about 5 minutes. Stir occasionally.
  3. Add minced garlic and oregano; cook until fragrant, about 2 minutes.
  4. Lower the heat and mix in ricotta cheese until well blended. If the sauce is too thick, add reserved pasta water gradually.
  5. Toss cooked pasta into the skillet and mix thoroughly to coat each noodle in the creamy sauce.
  6. Season with salt and pepper to taste. Serve garnished with fresh basil leaves.
