1 lb salmon fillet, skin removed and cut into bite-sized cubes
1 tbsp olive oil
1 tsp paprika
1/2 tsp garlic powder
Salt and pepper, to taste
2 tbsp butter
3 cloves garlic, minced
1/3 cup heavy cream (or coconut cream for dairy-free)
1 tbsp lemon juice
1 tbsp chopped parsley
Instructions
Season salmon cubes with olive oil, paprika, garlic powder, salt, and pepper.
Heat a nonstick skillet over medium-high heat. Sear the seasoned salmon for about 3 minutes on one side until golden brown; flip and cook for another 2-3 minutes until cooked through.
In the same skillet, melt butter over medium heat; add minced garlic and sauté until fragrant (about 30 seconds).
Pour in heavy cream (or coconut cream) and lemon juice, stirring gently. Let simmer for about 2-3 minutes until thickened.
Return the salmon bites to the skillet, coating them with the sauce. Cook together for another minute.
Finish with chopped parsley and serve over cauliflower rice or greens.
