  • 4 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • Green onions or chives for garnish

Instructions

  1. Chop all vegetables into uniform pieces.
  2. In a large pot over medium heat, melt butter with olive oil. Add onions, celery, and bell peppers; sauté until soft (5–7 minutes).
  3. Stir in minced garlic and sausage; cook for another minute before adding Cajun seasoning.
  4. Add diced potatoes and chicken broth to the pot; bring to a boil, then reduce heat and simmer uncovered until potatoes are fork-tender (15–20 minutes).
  5. Using an immersion blender, blend part of the soup for creaminess while leaving some chunks intact. If using a countertop blender, transfer half the soup carefully before blending.
  6. Stir in heavy cream or half-and-half gently over low heat until warmed through without boiling.
  7. Taste and adjust seasoning if necessary. Serve hot, garnished with green onions or chives.
