  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (room temperature)
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon coconut extract
  • 2/3 cup coconut milk (well mixed)
  • For frosting: 3/4 cup unsalted butter (softened), 1.5 tablespoons lime zest, 3.5-4.5 cups powdered sugar (sifted), 2 tablespoons fresh lime juice, optional green food coloring

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin pan with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, cream together room temperature butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition. Stir in vanilla and coconut extracts.
  5. Gradually add the dry ingredients to the wet mixture alternating with coconut milk until just combined.
  6. Fold in shredded coconut gently.
  7. Fill cupcake liners two-thirds full with batter and bake for 15-17 minutes or until a toothpick comes out clean.
  8. While cooling, prepare the lime buttercream: beat softened butter until creamy; gradually add powdered sugar followed by lime zest and juice until desired consistency is reached.
  9. Once cupcakes are cooled completely, frost with lime buttercream and top with toasted coconut flakes if desired.
