  • 1/2 cup Dutch process cocoa or unsweetened cocoa
  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 2 large eggs (at room temperature)
  • 1/4 cup unsalted butter (melted and slightly cooled)
  • 1/4 cup canola oil
  • 3/4 cup packed light brown sugar
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups packed shredded zucchini
  • 1 cup semisweet chocolate chips (divided)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-by-5-inch loaf pan.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and sea salt. Set aside.
  3. In a large bowl, combine the eggs, melted butter, canola oil, brown sugar, and vanilla extract until smooth.
  4. Gradually fold the dry ingredients into the wet mixture until just combined. Gently stir in the shredded zucchini and three-fourths of the chocolate chips.
  5. Pour the batter into the prepared loaf pan and sprinkle the remaining chocolate chips on top.
  6. Bake for approximately 50 minutes or until a toothpick inserted in the center comes out mostly clean.
  7. Allow the bread to cool in the pan for about 15 minutes before transferring it to a wire rack to cool completely.
