  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup coarsely chopped macadamia nuts
  • 4 tablespoons melted butter
  • 3 blocks (24 oz) full-fat cream cheese
  • 1 cup sugar
  • 3 large eggs
  • 1 cup heavy cream
  • 2 tablespoons orange extract
  • 8 ounces semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a bowl, mix graham cracker crumbs, chopped macadamia nuts, melted butter, and sugar until combined. Press firmly into the bottom of a springform pan.
  3. In another bowl, beat softened cream cheese until creamy. Gradually add sugar, then mix in eggs one at a time. Stir in orange extract.
  4. Fold in heavy cream until just combined.
  5. Pour filling over crust and smooth the top. Bake for about 60 minutes until edges are set but center jiggles slightly.
  6. Cool at room temperature for one hour before chilling in the fridge for at least four hours or overnight.
  7. For ganache, heat heavy cream until just simmering, remove from heat, then stir in chocolate chips until smooth. Allow to cool slightly before pouring over cheesecake.
  8. Chill again for 30 minutes to set.
