  • 6.5 oz snap peas
  • ¼ cup packed cilantro
  • 4 scallions
  • 1 tbsp lemon juice
  • 2 tsp toasted sesame seeds
  • 2 tsp honey
  • 2 tsp finely grated ginger
  • 1 tsp chili crisp
  • 2 tbsp sesame oil
  • Kosher salt

Instructions

  1. Boil 4 cups of water in a large pot. Add frozen edamame and a pinch of salt. Cook for about 3 minutes until they float; then drain and rinse under cold water.
  2. Wash snap peas and slice them on the bias into thin pieces.
  3. In a bowl, combine toasted sesame seeds, honey, ginger, chili crisp, and heat sesame oil until shimmering. Pour over the mix to infuse flavors.
  4. In a large mixing bowl, combine edamame, snap peas, scallions, and cilantro. Drizzle the dressing over and toss gently.
