  • 1 lb boneless chicken thighs
  • 1 medium zucchini
  • 3 cloves garlic
  • 1 teaspoon cornstarch
  • 1/4 cup light soy sauce
  • 1 teaspoon sesame oil
  • 2 teaspoons sugar (or honey)
  • 1 tablespoon cooking oil
  • 1 tablespoon oyster sauce (or mushroom-based alternative)
  • Ground black pepper (optional)

Instructions

  1. Cut chicken thighs into bite-sized pieces and marinate with cornstarch, soy sauce, sesame oil, sugar, and optional vinegar for at least 30 minutes.
  2. Heat cooking oil in a wok over medium-high heat. Sauté smashed garlic cloves until fragrant.
  3. Add marinated chicken to the wok and cook until golden brown.
  4. Remove chicken from the pan; stir-fry sliced zucchini in the same wok until tender-crisp.
  5. Return chicken to the wok along with oyster sauce and combine everything well for another few minutes.
