  • 4 fully-cooked chicken sausage links (about 12 oz.)
  • 2 Tbsp cooking oil, divided
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 2 (15 oz.) cans cannellini beans, drained
  • 1 cup chicken broth
  • 2 cups spinach, roughly chopped
  • 1/2 tsp salt
  • 1/2 tsp dried oregano
  • 1/4 tsp smoked paprika
  • 1/4 tsp freshly cracked black pepper

Instructions

  1. Slice the chicken sausage into round medallions about ¼ – ½ inch thick.
  2. Heat a large skillet over medium heat with 1 tablespoon of oil. Add the sliced sausage and brown for about 1-2 minutes on each side until golden.
  3. Remove the sausage from the skillet and set aside. In the same skillet, add another tablespoon of oil along with diced onion and minced garlic. Sauté until translucent (about 3 minutes).
  4. Stir in the drained cannellini beans, salt, oregano, smoked paprika, black pepper, and chicken broth. Bring to a simmer for about 4-5 minutes.
  5. Fold in the chopped spinach and return the browned sausage to the skillet. Heat through for an additional minute, then serve hot.
