  • 1 tablespoon avocado oil
  • 4 ciabatta rolls
  • 4 tablespoons mayonnaise (optional)
  • â…“ cup pesto
  • 6 ounces fresh mozzarella (sliced)
  • 4 Roma tomatoes (sliced)
  • Avocado oil (for brushing)

Instructions

  1. Slice the chicken breasts horizontally into cutlets and season both sides with Italian seasoning, salt, and pepper.
  2. Heat a skillet over medium-high heat with avocado oil. Cook the chicken cutlets for 5–7 minutes per side until golden brown and cooked through (internal temperature should reach 160°F). Rest the chicken.
  3. In the same skillet on medium-low heat, toast the ciabatta rolls cut-side down until golden brown (about 2–3 minutes).
  4. Spread mayonnaise and pesto on each half of the toasted rolls. Layer the sliced chicken, mozzarella, and tomatoes on the bottom halves.
  5. Brush the tops with avocado oil, assemble the sandwiches, and return them to the skillet for another 3–5 minutes until cheese melts.
