  • ¾ pound rigatoni pasta
  • 32 oz. marinara sauce (or up to 48 oz.)
  • 3 cups shredded mozzarella cheese (divided)
  • 1/3 cup grated Parmesan cheese (divided)
  • 2 small boneless skinless chicken breasts
  • ¾ cup flour
  • 2 teaspoons seasoned salt
  • ¼ teaspoon pepper
  • 2 eggs
  • 1½ cups Italian breadcrumbs
  • ¾ cup vegetable oil
  • 2 tablespoons butter

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Boil salted water in a large pot and cook rigatoni until al dente. Drain and set aside.
  3. Flatten chicken breasts using plastic wrap and season with seasoned salt and pepper.
  4. Set up three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs.
  5. Dredge chicken in flour, dip in egg wash, then coat with breadcrumbs.
  6. Heat vegetable oil in a skillet over medium-high heat. Fry chicken until golden brown on both sides; drain on paper towels.
  7. In a large bowl, mix cooked rigatoni with marinara sauce and half the mozzarella and Parmesan cheese.
  8. In a baking dish, layer half the pasta mixture, followed by fried chicken cutlets, then remaining pasta mixture topped with more sauce and cheese.
  9. Cover with foil and bake for 30 minutes; remove foil and bake for another 10-15 minutes until bubbly.
