  • 2 pounds boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 teaspoons smoked paprika
  • 1 teaspoon ground cumin
  • 1 cup plain Greek yogurt
  • 1 English cucumber (peeled and finely diced)
  • 6 pitas (or flatbreads)
  • Fresh veggies: romaine lettuce, cherry tomatoes, red onion

Instructions

  1. Prepare the tzatziki sauce by mixing Greek yogurt, minced garlic, dill weed, lemon juice, diced cucumber, salt, and pepper in a bowl. Refrigerate until serving.
  2. In a large bowl or ziplock bag, combine chicken breasts with olive oil, lemon juice, smoked paprika, cumin, minced garlic, turmeric, coriander, salt, pepper, onion powder, cinnamon, and crushed red pepper flakes. Marinate for at least one hour.
  3. Preheat grill to medium heat. Remove chicken from marinade and grill for 4-6 minutes on each side until cooked through (165°F internal temperature). Let rest before slicing.
  4. Warm pitas on the grill or in the oven. Assemble gyros by placing sliced chicken on pita topped with romaine lettuce, tomatoes, onions, cucumbers, and tzatziki sauce.
