  • 2 cups cooked chicken breast, shredded or diced
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups fresh spinach, chopped
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon dried Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a medium-sized casserole dish.
  2. In a skillet over medium heat, add olive oil and sauté the chopped onion until translucent, about 3–4 minutes. Add minced garlic and cook for an additional minute.
  3. Stir in the chopped spinach until wilted (about 2 minutes), then remove from heat.
  4. In a large mixing bowl, combine softened cream cheese and sour cream until smooth. Add mozzarella and Parmesan cheeses along with Italian seasoning, paprika, salt, and pepper.
  5. Gently fold in the shredded chicken followed by the sautéed spinach mixture until everything is well combined.
  6. Transfer the mixture into your greased casserole dish and top with remaining mozzarella cheese.
  7. Bake in the preheated oven for 20–25 minutes or until golden brown and bubbly. Let it cool slightly before serving.
