  • 1/2 cup dark brown sugar, packed
  • 1/3 cup dark molasses, not blackstrap
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar, for rolling
  • 4 ounces chocolate, finely chopped

Instructions

  1. Preheat your oven to 325°F (160°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, salt, and spices.
  3. In a stand mixer, cream together the butter and sugars until light and fluffy.
  4. Add molasses, egg, and vanilla; mix until fully combined.
  5. Gradually sift in dry ingredients while mixing on low speed until just incorporated.
  6. Scoop dough into balls, roll in sugar, and place on prepared baking sheets.
  7. Bake for 10-11 minutes, until puffed with cracks on top. Allow to cool before transferring to wire racks.
