  • 1 cup yellow cornmeal grits
  • 2 tablespoons salted butter
  • 1 cup shredded white cheddar cheese
  • pounds shrimp (peeled & de-veined)
  • 1½ cups chopped onion
  • 3 cloves garlic (minced)
  • 3 tablespoons cornstarch
  • 1½ cups low sodium chicken broth
  • 1 cup heavy cream
  • ½ teaspoon cayenne pepper (adjust to taste)
  • Fresh green onions and parsley for garnish

Instructions

  1. In a large pot, combine the water, low-fat milk, and salt; bring to a gentle simmer. Gradually whisk in the cornmeal grits while stirring constantly to avoid lumps. Cook for about 20 minutes until thickened.
  2. Stir in butter and white cheddar cheese until melted and smooth.
